Camden Market to launch first ever pub

THE FARRIER is a new neighbourhood pub and restaurant opening in North London’s iconic Camden Market on 15th April 2021. Breathing new life into a Grade II listed, beautifully restored former horse hospital and stables buildings, the 90-cover restaurant and pub with fire will focus on modern rustic dining from a three Michelin star trained chef, accompanied by an extensive selection of artisan and natural wines. The venue is Camden Market’s first ever pub, and will feature a hidden courtyard with outdoor heating and fire pit.

ABOUT THE FARRIER  

THE FOOD

Heading up the restaurant’s kitchen will be three Michelin star-trained chef, Ash Finch who has previously worked under Marcus Wareing and Alain Ducasse. Having learnt his craft at top London establishments The Langham and Wild Honey, and a brief stint at chef Rene Redzepi’s Noma, Finch joins The Farrier to curate a changing seasonal menu of modern rustic and comforting dishes that celebrate bold flavours and quality produce from the British countryside and sea. Dishes that will feature at The Farrier include Game Pie, Sole wrapped in Chicken Skin, Wild Smoked Pigeon, Crab Mac & Cheese and Salt Baked Squash. Working closely with independent family run British butchers HG Walter, Sunday’s ‘Sharing Roasts’ will allow diners to order whole roast poultry, meat or game from the seasonal specials board, to carve themselves at the table accompanied by all the trimmings and bottomless gravy. Later in the year, The Farrier will look to introduce a variety of intimate ticketed dining events such as Nose to Tail dinners and one off tasting menu’s using urban foraged ingredients. THE DRINK

The Farrier’s piece-de-resistance will be its floor to ceiling wine wall with sliding ladder. Speciality and rare natural, biodynamic and organic wines from small producers and wineries from around the world will be the focus of the wine list. Styles will range from natural British sparkling wines (e.g ‘Col 19’ from Tillingham Wines, East Sussex) to easy drinking favourites (e.g. ‘Chin Chin’ Vinho Verde from Quinta do Ermizio, Portugal) whilst showcasing lesser known orange wines (e.g. Staffelter Hof’s Little Bastard from Mosel, Germany) and rare low production reds (e.g Sky Zinfandel 2013 from Napa Valley, USA).

On a regular basis, the team will open some of the more premium and unusual wines, giving guests the opportunity to sample a glass of those usually only available by the bottle. 

“We’ve collectively worked in the hospitality and music industry for over 30 years. Through events and tastings, our jobs have allowed us the luxury of experiencing some of the finest foods and wines often only available in high end or intimidating settings. We wanted to create a welcoming space where people can have access to those quality food and wine experiences but in a totally relaxed and laid back environment.” Chris Gibson, co-founder The Farrier.

In true neighbourhood style, a nod to the local area has been made with Camden Hells and Camden Pale Ale available on tap, alongside an ever changing selection of craft beers, whilst the back bar’s range of spirits will include The Farrier’s own neighbours, Half Hitch Gin, also located in the market. 

THE INTERIORS

The 2,100 sq ft site has been respectfully restored to preserve its history and heritage, embracing its original exposed brickwork and cast iron features, whilst adding warmth throughout with an indoor fire, candlelight and soft furnishings. The outside area will feature a hidden courtyard with outdoor heating and fire pit.

THE MUSIC

Music will be an integral part of The Farrier experience. The team has engaged an acoustic consultant to source and install its vintage Celestion Hi-Fi system that has been restored by Audio Gold. Much time has been invested into calculating how to achieve the best sound possible within the space and the curated playlist will sit at home with iconic venues in Camden such as the Jazz Café and The Roundhouse.
