Londoners will soon have a new go-to breakfast and brunch spot, as Pablo’s prepare to open its first site in Covent Garden. The iconic and innovative brand, which was founded in 2020 and has six stores in the North East and Edinburgh,
has built a cult like reputation for its legendary fusion breakfast bao buns and hash browns.
Now, it is bringing its menu to London with plans to open its first location inside of the BLOODsports in Covent Garden by January 2027. The new Covent Garden location will bring the full Pablo’s experience to London for the first time, with an all-day menu
available to eat at BLOODsports, as well as for local delivery and corporate lunch orders. Its menu includes its Classic Breakfast Bao, features a pork patty, crispy hash brown topped melty cheese and spicy and sweet sauce, hugged by its super soft bao bun.
Its baos are best served with a Hashie Box, which includes three crispy hashies lovingly dusted in “crack powder”.
The partnership with BLOODsports founder Scott Collins also means Pablo’s will have a rather different home from the traditional breakfast café. Located in the heart of Covent Garden, BLOODsports combines live sport, food and late-night entertainment, giving
Pablo’s the opportunity to serve its breakfast-inspired menu well beyond the morning rush.
Emma Dent & Edward Evans, Founders of Pablo’s, said: “We’ve wanted to bring Pablo’s to London for a long time, so opening in Covent Garden feels like a huge moment for us. We can’t wait for Londoners to finally try them, and we think BLOODsports is the perfect
place for our first site in the capital.”
The London opening comes after Pablo’s built a loyal following across the North East and Scotland, serving more than 300 000 customers each year. And Covent Garden may only be the beginning. Pablo’s is planning further openings across the UK, with at least
five new locations targeted by mid-2027. The expansion is being supported by franchise consultancy Presman & Colard, with the BLOODsports partnership marking Pablo’s first franchise agreement.
Pablo’s at BLOODsports will be open from 7am to 2pm and is expected to launch in January 2026.
