Breddos Tacos, a stalwart of London’s taco scene, has unveiled its latest creation: the Sticky Toffee Churro. What started life as an off-menu insider’s secret is now taking pride of place on the specials menu at its Clerkenwell restaurant. Available in limited numbers, handmade fresh each day and served on a first-come, first-served basis.
The dish is the brainchild of Breddos’ Tijuana-born Head Chef, Ian Ciapara, who was inspired by the round, spiral churros of Mexico City’s famed Molino El Pujol on a recent trip to Mexico. In her version, Ian honours the Mexican classic while transforming it into something entirely new. Wanting to give the dish a British twist, she paired the churro with the rich, sticky toffee sauce beloved from the UK’s most iconic pudding.
Unlike a regular churro, Breddos’ recipe is enriched with egg, creating a softer, doughier texture that pairs perfectly with the sticky toffee drizzle. Served on a bed of date compote for extra depth and richness, the result is a dessert that bridges cultures. Blending the comfort of a Mexican street snack reimagined through the nostalgia of a classic British pudding.
Ian Ciapara says: “I grew up eating churros in Tijuana, so they’re close to my heart. When we discovered the spiral version in Mexico City, I knew I wanted to create my own take on it. Adding sticky toffee felt like a fun way of paying homage to my new home in the UK, and the date compote brings everything together. It’s about honouring tradition while creating something that feels completely new.”
Before dessert, guests at Breddos can warm up with sashimi-grade Tuna Tostadas layered with yellow bean, tomatillo, and crispy shallots; sticky Tamarind Chicken Wings glazed with pomegranate, honey, and sesame; and the bold, spicy Birria de Res Tacos — slow-braised beef shin and short rib cooked down with guajillo and ancho chiles.
And to drink? Whether you’re into a classic Margarita, a Coctel de Cafe (think: tequila espresso martini) or the sweet and spicy Limontour, with jalapeño tequila, they’ve got you covered.
