After years in Michelin-starred kitchens, Jordan set out with a simple goal: to take an everyday classic and make it exceptional. At Heard, he applies the same skill, precision, and obsession with flavour to the ultimate smash burger.
After perfecting his recipes in a street food van, Heard has now taken over the old Audrey’s site next to Flat Iron Square in Borough. This buzzy, 40-cover restaurant serves double-patty smash burgers made with high quality aged British beef, English cheese, and homemade pickles, all in a signature butter-toasted, roast potato bun.
Unlike most burger joints, Heard believes that high quality burgers deserve an equally good glass of wine or beer to accompany them. Jordan’s sommelier wife Majken Bech-Bailey has paired each burger with a wine and beer that perfectly complements the flavours.

SMASH BURGERS AND WINE PAIRING FROM MICHELIN STARRED CHEF JORDAN BAILEY
Heard is a new smashed burger concept from two Michelin starred chef Jordan Bailey, created with a simple aim – to take an everyday classic and make it exceptional. Following years of working in Michelin starred kitchens, Jordan wanted to bring the same skill, precision, obsession with flavour and high quality ingredients to a burger, without compromise. After a year of perfecting his recipes and touring some of the biggest UK events in the Heard food truck, Jordan brings his concept to a new pop-up restaurant in Borough, where his smash burgers and signature beef salt fries are paired with low-intervention wines and craft beers from a local independent brewery.
Born in Cornwall, Jordan Bailey has always felt the intrinsic link between the produce, the land around him and his cooking. Starting his career at the Michelin starred Elephant Restaurant in Devon, Jordan then honed his skills further at the 2-Michelin star Restaurant Sat Bains, where he had access to the world’s best ingredients and used seasonal produce from nearby farms. Then, Jordan worked his way up to Head Chef at Oslo’s renowned Maaemo restaurant, where his team were awarded a third Michelin star before he moved to Ireland and opened the critically acclaimed Aimsir, together with his sommelier wife, Majken Bech-Bailey. Using all Irish produce, and maintaining a dedication to hyper local ingredients, the husband-and-wife team won two stars in four months.
It’s this dedication to quality of produce that Jordan brings to his latest venture, Heard. Jordan has a passion for burgers, and like many chefs, burgers were what he always craved after creating intricate fine dining all week. After spending a year researching and developing how to perfect the humble burger, he launched Heard with the goal of using his skills as a chef and connections to quality suppliers to create incredible burgers at an approachable price, deceptively simple, yet elevated and crafted with the same care as a Michelin-starred dish.
Taking over the former Audrey’s site next to Flat Iron Square, Heard is a buzzy, relaxed and welcoming 40 cover restaurant serving double patty smash burgers, made with world-class aged British beef topped with English cheese and home-made pickles, served in a signature butter-toasted, roast potato bun.
At Heard the meat comes from renowned butcher, H.G. Walters, who has helped the team source regenerative meat from a cooperative of UK farmers that follow strict criteria. Beautifully aged for a minimum of 35 days, the meat’s texture and flavour is perfect for a smash burger, where the optimum combination is pink and pillowy on the inside with a crispy edge and sandwiched between a light, almost chewy bun, designed to soak up all the juices from the burger without falling apart. Cheese has been sourced from prime producers around the UK, with the British Ogleshield raclette style being the perfect tangy, creamy melting topping for the signature Heard burger.
Pickles are all created and stored at the restaurant and Heard’s signature fries use very high premium quality British potato. The novel topping of beef salt, inspired by Australian chicken salt, lends the perfect savoury kick accompaniment. A vegetarian burger option, The Umami, is made with black bean and wild mushrooms with kimchi. Dessert is an organic yoghurt ice cream sandwich made in-house with single origin chocolate and paired with a glass of Sherry.

Majken has paired each burger with a wine and beer that perfectly complements the flavours. The wines, high quality, organic, independent and sourced personally by Majken are perfect with the meal or enjoyed on their own, while the beers are from Forest Road Brewery, based a mere three miles from the restaurant site. Heard will also serve Majken’s very own non-alcoholic wine brand, BÆK.
