Great Taste, the coveted blind-tasted food awards set up in 1994 by the Guild of Fine Foods to celebrate the very best in food and drink, has just announced the Great Taste stars of 2021.
Out of over 14,000 products entered this year, 5,383 products were tested, with Marriage’s Organic Light Brown Plain Flour being one of only 218 to achieve a 3-star award, the highest accolade possible. This nutritious flour has a wonderful nutty flavour and handles with the ease of white flour.

Description automatically generatedJudges’ comments included “This brown flour has a clean wheaten aroma and is soft and whilst not wholewheat, has ample colouring. With excellent mixing characteristics and being very water absorbent, the dough rolled out well for a thin flan base and blind baked excellently to take the filling. This baked well and the base proved a perfect foil for the flan, having a gentle crispness and very pleasant mouth-feel. The flour was used to make a sweet biscuit, a Tantallon Cake, flavoured with lemon peel: the texture was superb, with shortbread-like snap – the flour texture came into its own, a pure delight. This flour fully deserves a three star rating.”

“This made the most sensational loaf of soda bread (among other things). It behaved like a white flour and the resulting texture had the lightness and rise of a white flour while also delivering the wonderful and pronounced nutty flavour of the brown. Good texture, the requisite amount of wheat fibre and a very enjoyable flavour – a really clever combination. Extremely moreish, this is a very useful flour.”
