Northern pizza favourite Forbici is opening its first pizzeria in the capital this October, bringing its Neapolitan-style pizza and signature Biga dough to Tooley Street in LondonBridge, just steps from the iconic food destination of Borough Market.
Founded in Manchester, Forbici is rooted in the traditions of Naples, where pizza is defined by craft, simplicity and generations of knowledge. Now, the award-winning pizzeria brings that Neapolitan heritage to the South.
Recognised among the Top 100 Best Pizzas in the World, Forbici will be one of just two UK restaurants to hold the accolade, joining London’s Crisp and bringing its globally recognised pizza to the capital’s thriving pizza scene.
Earlier this year, Marco Pierre White walked into Forbici’s Manchester pizzeria completely unannounced. After trying the pizza, the first British chef to win three Michelin stars called it “the very best pizza I’ve ever had in my life”, before signing the menu and leaving a personal note for Forbici’s pizzaiolo and Master Baker, Davide Argentino.
At the centre of the menu is Forbici’s three-generation Biga dough, combining traditional Italian techniques with its own distinctive approach to dough, fermentation and pizza craft to create a remarkably light, airy risen crust that is full of flavour without feeling heavy. Carefully selected Italian ingredients are then used to build pizzas that respect their Neapolitan roots while bringing Forbici’s own character to the plate.
Its name, meaning ‘scissors’ in Italian, reflects the precision and personality at the heart of the pizzeria. Every Forbici pizza is cut with scissors in four ways, creating a signature finish that is as much a part of the experience as the pizza itself.
The London menu will feature Forbici’s speciality, guest and white-base pizzas. Italian-inspired favourites include the Provola e Pepe, topped with San Marzano tomato, smoked provola, black pepper and fresh basil, alongside the indulgent Porcini e Tartufo, a white-base pizza topped with Fior di latte, porcini mushrooms, Italian truffle sauce and chives.
Andrew Garton CEO at Forbici said: “We’ve always wanted Forbici to grow without losing what makes it special. Our roots are firmly in the traditions of Naples, and we’ve built something we’re incredibly proud of in Manchester and Sheffield by taking that craft and making it our own.
Being recognised among the Top 100 Best Pizzas in the World is a brilliant reflection of what we’ve created. London feels like a natural next step for us, and we’re excited to bring what we do to the capital for the first time. We know London has a brilliant and discerning pizza scene, and we can’t wait to give Londoners a reason to make Forbici their new go-to.”
From Napoli to Manchester, Sheffield and now London, Forbici continues to bring together Neapolitan tradition, Northern character and its own distinctive approach to pizza, one pizza at a time.
Forbici opens on Tuesday 27th October at 120 Tooley Street, London Bridge, SE1 2TH, London.
