Rocola, the East London restaurant and rotating kitchen from the team behind Crudo and Tiny Wine, has handed its kitchen over to Sebastian, Colombian Group Head Chef of both restaurants, for a new three-week residency celebrating the bold flavours of Latin America.
Drawing on the food he grew up with and his travels across Buenos Aires, Mexico and Colombia, Sebastian has created a menu of fresh, fiery and vibrant dishes, making Rocola the place to try Latin American flavours in a way that feels true to the food and culture behind them.
Highlights include Tuna & Watermelon Tiradito with ají amarillo and furikake, Beetroot Aguachile with guajillo and ancho chilli, and Oaxacan-style Barbacoa Lamb Chops, alongside Cornish Mussel Linguine with ají amarillo cream and achiote oil.
For something sweet, there’s Dulce de Leche Mousse with cancha corn, coffee and mezcal.
Sebastian’s menu will only be available until 22 August, making it a great chance to discover Latin American cooking through a chef who has lived and worked across the region, right in the heart of East London.
