On 1st September, God Save The Pizza (GSTP), founded by award-winning restaurateur Roberto
Costa, will officially open in Exmouth Market, Islington.
God Save The Pizza’s mission is to flip the script on pizza-making and bring prominence back to
the all-important toppings. Challenging the dominance of “London-style” pizza, God Save the
Pizza will champion the idea that pizza is ultimately a celebration of exceptional ingredients,
with the dough serving as the perfect canvas for what covers it.
The menu is split into three tiers, Original, Revolution and Rebel, each offering a different level
or anarchy on the dough. GSTP focuses on Roman-style thin and crispy sourdough bases
available as an 8″ pizzetta, a 14″ pizza to share, or a 12″ gluten-free base, with every pizza sliced
into 8 to share. Guests can also choose to Create Your Own Pizza, building from base, sauce and
cheese, with up to four toppings included at no extra charge.
Original pizzas keep things classic with standout specials including “Italy is Born” which
features GSTP marinara tomato sauce, garlic and oregano. Fittingly named “The Queen”, this
pizza is made up of GSTP tomato sauce topped with mozzarella cream, parmesan and basil oil.
Rebel pizzas push the boundaries furthest, led by the “Meat Feast”. Combining hearty beef ragu,
fiery spicy salami, punctuated by red chilli and mozzarella over the signature GSTP tomato
sauce. A fiery spaghetti assassina sauce that lives up to its “Hot Hot” name. Most controversial
of all, at least by Italian standards, is the “Extremist”, ham, cheddar and pineapple sauce with a
4-cheese cream, a nod to indulgence over tradition.
Beyond pizza, guests can enjoy a selection of sides including Spicy Lasagna, Chicken Wings
with curry sauce, Beetroot Hummus with pizza bread, Meat Chilli Jacket Potatoes, and Gateau
Potato Croquettes with aioli sauce. God Save The Pizza is also bringing its rebellion straight to
the home kitchen with “Finish At Home” pizza kits for Londoners.
The interiors for the new space have been designed by Maria Olivia and take inspiration from
the steps surrounding the famous Shaftesbury Memorial Fountain in Piccadilly Circus, where
punks gathered in the early 1980s. The space mirrors this rebellious spirit, with renegades
sharing pizza over stepped seating as a subtle nod to the era. Moving through, the bold colours
of graffiti and neon lead guests to a window of bright, puckered lips where they can pick up a
slice.
Born in Genova, Roberto Costa is a restaurateur with more than 35 years of experience. After
helping launch fourteen restaurants across Italy, he moved to London and founded Macellaio
RC, a collection of restaurants spanning London and Milan. A passionate advocate for Italian
culture and cuisine, Costa is recognised as one of Genova’s ambassadors to the world, serving as
President of the Italian Chamber of Commerce UK.
